These can be made as cake pops or truffles. The recipe is sooo simple. Just Thin mints and cream cheese for the ball and then cover with green icing (or white would be fine too). No baking involved! The recipe says to use Keebler Grasshopper Mint Chocolate cookies, which would be fine after you eat through your last box of Thin Mint girl scout cookies. See the full recipe here.
